Yes, you can buy these boba bars at your local Costco, H-mart, other grocery stores and even online.

But they seem to be sold out all the time, and when you are lucky enough to find some you might get second thoughts after looking at the price for these brown sugar ice cream bars!

So we decided to share this brief recipe on how to make them at home. 

Don’t worry! The process isn’t that complicated. Just a little knowledge and a bit of practice and you will have your perfect treat ready for you in the freezer whenever you crave it. 

Let’s get straight into it!

Equipment

  • Silicone ice pop molds and sticks
  • Heatproof bowl
  • Saucepan
  • Slotted Spoon
  • Rubber Spatula

Ingredients

For the boba pearls and boba syrup:

  • ¾ cup of glutinous rice flour (plus 2 tbsp extra for working the dough) Yes, glutinous rice, not tapioca starch, as it won’t work well with cold temperatures
  • ¾ cup dark brown sugar
  • ⅓ cup boiling water
  • 2 tbsp unsulphured molasses

If you are having a hard time choosing or finding Glutinous rice flour then you can buy them from Amazon. We recommend these because of the extra fine flour which is the best for preparing boba pearls.

For the ice cream bars:

  • ¾ cups of sweetened condensed milk
  • ⅛ tbsp salt
  • 1 cup of cold heavy cream

Directions

Boba Syrup and Pearls

  1. Take ¼ cup of brown sugar and ¾ cup of rice flour in a heatproof bowl, and mix well.

  2. Slowly add the boiling water, mix the rice flour and brown sugar until completely smooth. There should not be any streaks of flour.

  3. Take the dough out of the bowl and put it on a clean surface. Knead the dough until it becomes soft and a bit sticky.

  4. Add 1-2 tsps of extra rice flour to an empty bowl.

  5. Cut the dough into 4 equal pieces. Take one piece at a time and roll it on the surface to form a rope that is around ¼ inch wide. Then cut the rope into segments that are also ¼ inch long.

  6. Make balls out of the ¼ inch segments and put them in the bowl with the rice flour. Gently put all the balls in the flour to prevent sticking. Repeat the same process with the other 3  dough pieces.

  7. Now, take a saucepan and fill it with water. Boil the water over medium heat.

  8. Sift the rice flour from the balls and put them gently in the boiling water. Stir the water in the beginning so that the balls don’t stick to each other.

  9. Cook for 3 minutes and drain the boba balls.

  10. Shift the boba back to the saucepan and add the remaining brown sugar (½ cup), the molasses, and water (½ cup). Stir occasionally and cook over medium heat. Make sure the molasses become thick at the end. Cook for around 8-10 mins.

     
  11. After your mixture becomes a little thicker than maple syrup, transfer it to a medium bowl and refrigerate for around 1 hour. You have now finished the brown sugar boba and the boba syrup.
Tapioca Pearls for Boba bars

For the Ice Cream 

  1. You will prepare the ice cream base only after your boba pearls and boba mixture are ready.

  2. Mix the salt and condensed milk in a medium bowl and keep it aside.

  3. Whip the heavy cream in a large bowl using an electric hand mixer (or manually if you want a workout). Soft peaks should be able to form telling you it’s ready. Do not over beat!

  4. Now, fold ⅓ of the cream and put it into the salted condensed milk. Mix until incorporated, without over mixing.

  5. Put the mixed cream, condensed milk and salt  mixture into the bowl with the remaining whipped cream. Fold the mixture evenly without over mixing.

  6. Now fill the ice pop molds with 2 tbsp of the boba pearls you just created (or an appropriate amount based on the size of the molds and what you like).

  7. Drizzle with ½ tbsp of boba syrup.

  8. Fill the rest with the cream mixture, then tap the molds to remove any air bubbles.

  9. Insert the ice pop sticks and carefully keep the molds in the freezer for a minimum of 8 hours or overnight.
